Its all about the flavor
When I decided it was my time to open a restaurant, I started with some specific goals in mind. I wanted to serve the best quality food I could. No shortcuts and using only the finest ingredients to make the authentic flavors I crave. Growing up in my hometown of Guasave in Sinaloa Mexico, no matter what we were served or cooked, everything was rich in flavor. As we were close to the Pacific coast, naturally we ate a lot of seafood. But many people were very poor and food ingredients were hard to come by. Authentic Mexican cooking has the ability to take very simple ingredients and make very delicious dishes by using different peppers, spices and using the right cooking technique. After moving to the United States, at times I missed those flavors that were hard to find especially in Missouri. I put my knowledge of cooking those authentic dishes to use cooking traditional dishes for my family. I longed to share my knowledge and delicious food and a restaurant seemed to be the best way for me to do that. If you use high quality fresh ingredients and make your own sauces, you will have delicious food that is very hard to find these days.
